Happy Easter!

Ingredients:
225g mixed dried fruit
110g soft brown sugar
110g butter
150ml water
225g self raising flour
1 egg (plus 1 egg for decorating)
1tsp lemon rind (optional)
1tsp orange rind (optional)
2tbsp arpicot jam
450g marzipan
Method:
1. Mix the fruit, sugar, butter, mixed spice, water, lemon and orange rind in a pan and simmer for 20 minutes, allow to cool.
2. Pre-heat the oven to 190°C or gas mark 5 and line 15cm (6 inch) cake tin with baking parchment.
3. Stir in the flour and one of the eggs to the cooked mixture, then pour into the prepared cake tin.
4. Bake in pre-heated oven for 60 to 90 minutes. Test with a skewer to see if it is ready.
5. When the cake is cool, brush the top with warmed apricot jam and roll out half the marzipan to fit the top. Press firmly on the top an neaten the edges.
6. Roll out the remaining marzipan into 11 balls.
7. Brush the marzipan with beaten eggs and arrange the marzipan balls around the edge of the cake. Brush the top of the balls with the remaining beaten egg and then carefully place the cake under a hot grill until the top is lightly toasted.
